Ingredients and spices that need to be Take to make Mastani Chat:

  1. For Tikki:
  2. 1 and 1/2 cups Frozen green peas (boiled And coarsely chopped)
  3. 1/4 cup Grated paneer
  4. 1/4 cup Boiled mashed potatoes
  5. 2-3 tbsp Corn flour
  6. 2 tbsp Finally chopped green chillies
  7. 2 tbsp Ginger paste
  8. 3 tbsp Finally chopped coriander leaves
  9. 2 tbsp Garam masala
  10. 1 tsp Roasted cumin powder
  11. 1 tsp Fennel powder
  12. 1/2 tsp White pepper powder
  13. 2 tsp Coarsely ground black pepper powder
  14. 1 tsp Black salt
  15. 1/4 tsp Turmeric powder
  16. to taste Salt
  17. as required Oil for shallow frying
  18. For For Mint Chutney ::
  19. 1 cup Mint leaves 1cup
  20. 1 cup Coriander leaves 1 cup
  21. 3-4 pieces Garlic cloves
  22. 3 pieces Green chillies
  23. 1 inch Ginger
  24. 2 tbsp Lemon juice
  25. 2 tbsp Curd
  26. 1 tsp Sugar
  27. to taste Salt
  28. 1/4 tsp Black salt
  29. Few ice cubes
  30. For Curd::
  31. 2 cups Hung curd
  32. 2-3 tbsp Powder sugar
  33. 1 pinch salt
  34. 3 tbsp Green mint chutney
  35. For Sweet and sour orange chutney :
  36. 600 ml Orange juice
  37. 6 tbsp Sugar
  38. 5 pieces Black pepper corns
  39. 2 pieces Cardamom
  40. 2 cloves
  41. 1 piece star anise
  42. 1 inch Cinnamon Stick
  43. 1/4 tsp + 1 pinch Black salt
  44. 1/4 tsp Nut meg powder
  45. For Garnishing ::
  46. few Grilled paneer slices
  47. as needed Thin julienne carrots (3 cm)
  48. as required Thin julienne beetroots (3 cm)
  49. as required Julienne citrus zest (3cm)
  50. as required Pomegranate seeds
  51. some Mint leaves
  52. as required Nylon sev
  53. as required Mix chat Masala

Instructions to make to make Mastani Chat

  1. Heat a non-stick saucepan, add orange juice, black peppercorns, cardamom, clove, star anise, nutmeg powder, cinnamon stick, boil it on medium heat for 10 to15 mins and stir this continuously. After 15 mins add sugar and black salt, mix well. Cook for 2 to 3 mins, off the flame. Cool it completely and pour this sweet and sour orange chutney into a glass jar and keep this jar inside the refrigerator. You can store this chutney for about 2 weeks.
  2. Bring a blender jar, add green chillies, garlic, sugar, ginger and salt, blend this. Now add mint leaves, coriander leaves, lemon juice, curd, black salt and ice cubes, blend into smooth mixture. Pour this into a glass jar. Green mint chutney is ready.
  3. In a mixing bowl, add hung curd, sugar and salt, mix well to get a creamy texture. Bring a bowl, add half in the bowl, add mint chutney and mix well. Bring 2 piping bags, in one piping bag add plain curd and in another bag add mint flavoured curd and keep this into the refrigerator.
  4. Making Tikki:: In a mixing bowl, add coarsely crushed peas, grated paneer, mashed potatoes, cornflour, green chillies, ginger paste, coriander leaves and mix well. Add all the dry ingredients in this mixture, mix well. Divide the mixture into equal portions and shape them into round tikkis. Heat sufficient oil in a non-stick kadhai and shallow fry the tikkis, a few at a time, till golden brown. Drain all the tikkis on absorbent paper. Tikkis (patties) are ready. Mastani Chat is ready to serve.
